Ingredients:

For the Cake:

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 2 cups granulated sugar
  • 5 oz dark chocolate, chopped
  • 6 tablespoons unsalted butter
  • 2 tablespoons vegetable oil

  • 2 large eggs

For the Icing:

  • 1 ½ cups (3 sticks) unsalted butter, softened
  • 2 teaspoons vanilla extract
  • ¾ teaspoon pure peppermint extract
  • ¼ teaspoon salt
  • 7 cups powdered sugar

Instructions:

  1. Preheat and Prepare:
    • Preheat oven to 350°F. Butter two 8-inch round cake pans and line the bottom with parchment paper. Set aside.
  2. Mix Dry Ingredients:
