Ingredients:

  • 1 cup (225g) unsalted butter, room temperature
  • 1 cup (200g) granulated sugar
  • 4 large eggs
  • 1/2 cup (120ml) dark rum
  • 1/2 cup (120ml) orange juice
  • 2 cups (280g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup (140g) raisins
  • 1 cup (140g) dried currants
  • 1 cup (140g) chopped dried apricots
  • 1 cup (140g) chopped dates
  • 1 cup (140g) chopped pecans
  • 1 cup (140g) chopped walnuts
  • 1 cup (140g) chopped candied cherries
  • 1 cup (140g) chopped candied pineapple
  • Zest of 1 orange
  • Zest of 1 lemon

Directions:

  1. Preheat the oven to 325°F (160°C). Grease and flour a 10-inch (25cm) bundt pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Stir in the dark rum and orange juice until well combined.
  5. In a separate bowl, sift together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
