Ingredients:
- 1 cup (225g) unsalted butter, room temperature
- 1 cup (200g) granulated sugar
- 4 large eggs
- 1/2 cup (120ml) dark rum
- 1/2 cup (120ml) orange juice
- 2 cups (280g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup (140g) raisins
- 1 cup (140g) dried currants
- 1 cup (140g) chopped dried apricots
- 1 cup (140g) chopped dates
- 1 cup (140g) chopped pecans
- 1 cup (140g) chopped walnuts
- 1 cup (140g) chopped candied cherries
- 1 cup (140g) chopped candied pineapple
- Zest of 1 orange
- Zest of 1 lemon
Directions:
- Preheat the oven to 325°F (160°C). Grease and flour a 10-inch (25cm) bundt pan.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- Stir in the dark rum and orange juice until well combined.
- In a separate bowl, sift together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the raisins, currants, apricots, dates, pecans, walnuts, candied cherries, candied pineapple, orange zest, and lemon zest until evenly distributed throughout the batter.
- Pour the batter into the prepared bundt pan and smooth the top with a spatula.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the fruitcake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
